Decadent desserts can be time consuming and tedious to make, but sometimes you want more than a few cookies for an after-dinner treat. It is possible to streamline some desserts into a faster (and easier) version that can be made in just minutes. Chocolate mousse is one of those ultra-rich delicacies that tastes amazing but takes only a few ingredients, a little time and not much effort.

If you are new to my blog, you may not have noticed I have a very structured format when it comes to posting. My recipes are broken into several different categories that include cookies, healthy treats, quick & easy desserts, etc. One of these categories is “cupcakes,” a dessert that happens to be one of my favorite to make because of the options with the cake, fillings, icing and toppings. The endless flavor combinations appeal to the experimental baker in me and the presentation possibilities make decorating and photographing cupcakes more of a joy than a job. I love to make them.
I just don’t love to eat them.

Filling cupcakes prior to icing them is messy, time consuming and tedious. Having to scoop out sticky cake crumbs and pipe in custard or jam can be a huge pain so a filling baked into the cupcakes is a dream come true. And when two different fillings are added it can be a match made in dessert heaven.

Cookies are amazing. They can be made in any flavor or shape imaginable, sandwiched together and filled or topped with icing, fruit or sugary decorations. They are easy to pack up and travel with or eat on the go. Making cookies is easy, quick and most ingredients are readily available. And almost everyone loves at least one kind of cookie so a variety tray is a great choice for any party.

As a non-drinker of coffee, you may think it is strange that I am a huge fan of Starbucks. It is not their fancy hot or cold drinks that I enjoy but rather their sandwiches and pastries. One of my favorite treats, the Chocolate Cinnamon Bread, is no longer available. It was only a holiday item but for the past couple years, our Starbucks has not carried it so I think it has been permanently retired. Because I was now unable to buy it, I had to find a way to make Chocolate Cinnamon Bread myself.
